Enjoy this juicy pork chop served on a bed of thyme apple wild rice and topped with a delicious creamy thyme sauce. This perfect date night meal is not too heavy, leaving you with room for dessert 😜
Ingredients
Apple Wild Rice
1 cup cooked wild rice (I used Uncle Ben's)
1/2 cup diced apple
2 tbsp fresh thyme
1 finely chopped shallot
2 cloves garlic finely chopped
1 tbsp extra virgin olive oil
1 tbsp unsalted butter
Salt and pepper to taste
Pork Chop and Sauce
2 fresh Pork Chops
2 tsps fresh thyme
I tablespoon unsalted butter
1/2 tsp Dijon mustard
Pinch of nutmeg
1/4 cup heavy cream
1/4 tsp minced garlic
Instructions
Combine apples, thyme, butter, shallots, and olive oil and cook until the the shallots are becoming translucent
Add the rice to the mixture and cook and mix well and set aside
Season the pork chop with your favourite seasoning salt. I used some garlic powder, paprika, and seasoning salt.
Add some olive oil to a hot cast iron skillet and brown the pork chops both sides. Should be about 2-3 minutes per side.
Put the pork chops in a preheated oven at 350 and cook until the internal temperature is 150 degrees.
In a small saucepan add butter, garlic and thyme and cook on medium heat for about 3 minutes. Add the cream and Dijon mustard and mix well.
Once it's cooked add a pinch of nutmeg and season to taste.
Once everything is cooked plate and enjoy
