Enjoy this delicious, bright, quick and tasty summer side dish with seasonal ingredients.
Ingredients
Herby Rice
1 cup TILDA Pure Rice
1/4 cup chopped parsley
2 tbsp chopped cilantro
1 thinly sliced shallot
1 lemon, zest and juice
2 cloves garlic finely chopped
1 pinch chilli flakes (optional)
1 tbsp extra virgin olive oil
1 cup cherry tomatoes
2 boneless chicken thighs
1 tsp seasoning salt
Salt and pepper to taste
Instructions
Combine parsley, cilantro, lemon zest, shallots, garlic, olive oil, chilli flakes and lemon juice and set aside
Prepare the tomatoes for the grill and put them on a skewer
Season the chicken with the seasoning salt and grill
Once the tomatoes are done on the grill, add the to the herb mixture and mix well
Serve the tomato mixture and grilled chicken on top of the Tilda Pure rice and enjoy.
